I tried to find a "not so graphic" picture of ......PINK EYE!!!
My poor girls have it.
My 5 yr old has it really bad.
This morning she looked like someone punched her in the eye :-(

I knew last night that the 5 yr old had it.
I did a little looking for homemade solutions.
One suggestion was to get salt water and soak cotton balls in it
then wipe the eyes, letting the water seep into the eye.
Of course, we went to the Dr today to get the meds to treat it.
I've not put the drops in yet, but I was just looking at her eyes and
guess what? They look lots better!

Oh, I'm going to use those over priced eye drops
($70.00 per tiny bottle)
but it makes me wonder if we TRULY needed them?

How many simple solutions or home remedies could we use to solve the day to day, run of the mill icky-s that come around?

Super Savings Saturday Publix Trip (2/27/09)

I actually have a Super Savings Saturday post!!
I was able to make a super quick trip to Publix today.

Here's how I did:
  • (4) Betty Crocker Brownie Mix BOGO = $1.30 each - $0.50 q x 2 = $0.30 each
  • (4) Pam Cooking Spray BOGO = $1.57 each - $0.35 q x 2 = $0.87 each
  • (4) Can't Believe It's Not Butter BOGO = $1.50 each - $0.40 q x 2 = $0.70 each
  • (2) Lysol 40-oz cleaner BOGO = $1.60 - $0.50 q x 2 = $0.60 each
I paid $8.53 and saved almost $33.00!

That's almost a 74% savings!

Well, mom and David got home around 8:00 pm tonight. It's not good news. In fact, it's pretty scary. The growth he has is cancer. He also has it growing inside. There are 3 options for him.
  1. Do nothing. What will happen? Well, the cancer will grow into his jugular vein, get into his blood stream and kill him.
  2. He can have surgery and have the tumor removed and remove as much as possible inside without taking his voice box.
  3. Remove the tumor, the cancer growing inside and take the voice box.
Right now, he's looking at choice #2. If they take the voice box he will have a tube in his throat from now on. He had to do that for a while after his last surgery and he just can't stand the thought of it again.

He has surgery scheduled for March 16. He will be in Charleston for 5 - 7 days. He will have a feeding tube in his nose for a while again, but hopefully that will come out before he leaves the hospital. (I mean would you like to walk around with a long thin tube hanging out of your nose all the time? Well, he's done that and he hated it! )

He will probably have to have chemo, radiation or both. Last time it was radiation only. Who knows what it will be this time.

We all feel that this is a huge step backwards.

He's been doing so well. I mean, you can't imagine how wonderfully he has recovered. It's heartbreaking.

He never married. He has no children. He lives with my grandmother who is 96 yrs old. His surgery last time was hard on her. She is much more frail this time (she fell last year and broke her hip. She's doing really good now, but a few weeks ago she fell outside and busted her head). Not only do I worry for David, but for the well being of my Na Na as well.

But, we are blessed. Through it all, God is with us. He saw David through the last surgery and recovery and He will be there this time. After I spoke with mom I needed to talk to God. I sat in the dark and prayed and listened. This is what kept playing over and over in my mind....

Bi Lo Bargain Meal (2/25/09 - 3/3/09)

Bargain Meal of the Week


It's BBQ time!

Bi Lo has Boston Butt Pork Roast on sale for $1.39 per lb.
Most of these run about 4 - 5 lbs each putting your cost at $5.56 - $6.95 for a roast. You will cook it all at once but there will easily be enough for 2 meals and possibly a lunch or two. This will put your cost at $2.78 - $3.48 for two meals.

Here's how I cook my pork roasts to make BBQ.
  • Get out that trusty crock pot.
  • Take your roast and salt it well all over.
  • Put the roast in the crock pot with the fat side on top.
  • Fill the crock pot at least half way with water.
  • Put the top on and turn the crock pot on high.
  • Cook 6-8 hours or until the meat is fork tender.

That's all there is to it! When it's done, I like to pull it into shreds and discard the fatty pieces.

You can serve this as a BBQ plate with your favorite BBQ sauce, some green beans and potato salad or you can make BBQ sandwiches with baked beans and fries.

This will make more BBQ than you realize. With an average family of 4, you'll probably have half of the meat leftover. Once it's cool, package in a freezer bag and pop it in the freezer. Now you are ready for BBQ on one of those super busy nights when you don't have time to cook. Just take out the meat in the morning and put it in the fridge. When you are ready for dinner, just heat up the meat, add your favorite sauce and you are good to go!

Praying for David

Today I am asking for prayer for my Uncle David.
You see, two years ago he was told he had tongue cancer.
He went to Charleston and had his tongue removed.
He had all of his teeth removed.
The doctors then took muscle from his shoulder and made a new tongue for him.

He has made an amazing recovery. It's nothing short of a miracle. Some people never get off a feeding tube. Well, this remarkable man has been off that feeding tube for over a year. He can't "chew" food, but he is able to eat and even taste lots of foods. Did you know you have taste buds in your throat?
He lives at home with his 96 year old mother and he does all the stuff he's always done.

Now, we think the cancer is back. He has a growth under his chin. He and my mom have gone to Charleston today for more tests and to find out for sure what this is. There is a small chance it is an infection, but we really don't think it is. Once they find out for sure what it is, they will be performing surgery to remove it.

Please take a moment to say a prayer for him today.

I'll update what the doctors tell us later today.

Bargain Meal of the Week
Sorry I'm late on this guys.
It's been a birthday weekend for us plus super busy at church.
I didn't even find time to get my newspapers this Sunday *gasp*

Anyway....onto the Bargain Meal of the week.

Ingles has ground beef on sale for $1.98 per lb
if you buy 5 lbs or more.
Go ahead and get some. That is a really good price for ground beef.
I like to split my package up and stock the freezer.
I take one pound of meat and put it in a freezer bag.
An Easy - Peasy way to save money.

Today I've got a great meatloaf recipe for you.
It's from Paula Deen so you KNOW it's gonna be good.

Barbeque Meat Loaf
1 - 1/2 lbs ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1/2 teaspoon pepper
1 (8 ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard (I use regular mustard if I don't have Dijon on hand)
2 tablespoons Worcestershire sauce
1/2 cup of water, to thin sauce if necessary (I don't use this)

Pre-heat oven to 350*. Mix together beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce.. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire sauce, and water (if too thick). pour this sauce over the meat loaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

This recipe serves 6.

I'm figuring you already have most of these basic ingredients on hand and will just need to pick up...

1 - 1/2 lbs Ground Beef $2.97
2 cans tomato sauce $1.00

Cost: $3.97 to serve 6

Add some mashed potatoes and peas (our favorite sides for meat loaf) and you've got a great, comfort food supper!

At $1.98 per lb, try to think of some other dinners to use ground beef in. We love tacos, hamburgers, fried hamburger steaks, chili, spaghetti...the possibilities are nearly limitless.

A great time saver is to cook up batches of ground beef to freeze and use later. I'll cook ground beef, add taco seasonings (I have a great recipe for this), cool and put in a freezer bag and pop in the freezer. Later on, when I'm ready to have tacos all I have to do is re-heat the meat.

You can do this with spaghetti sauce, too. Cook your ground beef, drain and add spaghetti sauce. Cool then freeze.

I also like to pre-make hamburger patties. Press them out without over working the meat. Place wax paper between patties so they don't stick together. Put in freezer bag and freeze.

Bargain Meal - Bi Lo (2/18-2/24)

Bargain Meal of the Week
Okay, it's that time again!
Bargain Meal of the Week - Bi Lo!!!!

Bi Lo has Split Chicken Breast on sale for $0.99 per lb.
Oh the things you can do with chicken :-)
If you can, stock up and fill the freezer!
Here's an easy yummy chicken dish that is one of our faves....

3 lbs of skinless, boneless chicken
(yes, that means you will need to skin and de-bone the chicken)
2 cans of cream of chicken soup
1/2 can of water (I use the can the soup came from)

Line a baking dish with the chicken. Sprinkle with a little salt and pepper to taste. Mix the soup and water until combined and pour over chicken. Cover with foil and bake at 350* until the chicken is done and fork tender.

I like to serve mashed potatoes with this dish and pour the gravy from the chicken over the potatoes. Add some English peas and you've got one yummy supper!

3 lbs of chicken - $2.97
5 lb bag of Walter's Russet Potatoes $3.49 - use 1/2 = $1.75
Le Sueur Peas = $1.44 (these are the only kind of peas I buy. You may find another brand that you enjoy to be less expensive)

Total Cost of Meal : $6.16

Make enough mashed potatoes to have 2 cups left over and use them for supper another night with this recipe:

Rachel Ray's Left Over Mashed Potato Soup

Ingredients:
6 slices of bacon, chopped
4 tablespoons of butter
1 medium onion, chopped
4 tablespoons of flour
1 quart of chicken stock
2 cups left over mashed potatoes
8 ounces yellow cheddar cheese shredded

Directions:
In a medium pot or Dutch oven, cook bacon until crispy. Remove bacon and reserve. Drain bacon fat from the pot and add butter. When it is melted, add onion and cook until softened, about 5 minutes. Sprinkle flour into the pot and cook with a wooden spoon for one minute. Whisk in the chicken stock and bring to a bubble. Cook until slightly thickened, about 2 -3 minutes. Whisk in mashed potatoes, then stir in cheese with a wooden spoon and cook until the potatoes are hot and the cheese is melted. Transfer to a serving dish and garnish with the reserved bacon and chives.

Right now Bi Lo has Southern Home Shredded Cheddar Cheese on sale for $1.67 for 8 oz.
Pick up a bag of Fresh Express Garden Salad for $0.99 and even some Fresh Baked Pane Italiano Bread for $2.00 and you've got another super yummy, very frugal dinner!

De Clutter Mission: The Entertainment Center

I have been neglecting my living room for too long. Oh, this much used room gets tidied up every night, but cleaned? Um…well we won’t tell exactly how long it’s been ;-)

With my oldest sons birthday party coming on Sunday, it’s the perfect time to get this room spic and span.

My mission today was to get the entertainment center de-cluttered and dusted.

As you can see in my before picture, it was a mess:

I’d love to do a decorating overhaul here, but you frugal folks know that it’s got to be done in the right time with the least amount of money. So, using what few do-dads that I have, I did the best I could.

I really need to update the kids pictures. I mean, those pics in the middle were taken at Easter 2004! My now nearly 6 year old was 9 months in her picture.

And see that pitiful short frame on the end? Well, that is baby #4’s 18 month picture (he’s almost 3 now). I wanted his picture with the others, but I couldn’t find a matching frame so his picture just got stuck in one and put on the shelf.

I would also like to eliminate several of the pictures on the shelves. Oh, I love them, don’t get me wrong. BUT….there needs to be a few more “pretty-pretties” and a few less kids pictures, ya know?

For the most part, the living room /dining room / study area is de-cluttered. One good part about not having much furniture or many shelves is not having a place to clutter up.

Later in the week I’ll be wiping, dusting, vacuuming and putting things in their place.

For now, I’m happy with what I have accomplished.

Tomorrow I have a meeting at school, then I need to shop for the birthday boy. We’re having a small, family party at home on Sunday . This year he asked for a “cookie cake” which is cool with me. Those are much easier to make than the decorated cakes I usually make. That also means there is no “theme” so the party supplies will be kept to a bare minimum. Simple and sweet…gotta love it!

Well, the kitchen is calling….”Time to get dinner started”…..

Salmon was BOGO at Food Lion this week. We don't live near a Food Lion, but DH drives by one on the way to work so he grabbed the salmon for me. They also had butt-portion hams on sale for $0.88 per lb and he got of of those,too. Isn't he a sweetie?

The frozen pizzas I got at Bilo. They were BOGO plus I had $1 off coupons for each one so I got the pizza's for $2.14 each. My oldest boy has been begging for cheese sticks and Publix has them BOGO so they were $3.85 for a large bag.

Sunday is going to be one wild ride. We have church from 9:30 - 12:30 then home for a quick and simple lunch of what I do not know yet. At 2 PM my oldest child is having his 11th birthday party. Then my daughter has to be back at church for dance practice at 4:45. The rest of us will join her at church at 6:00 for the evening service. The children's choir will be singing so we really can't miss it. After that it's gonna be out to eat because I'm gonna be WAY to tired to cook and clean up :-)

Now I've got to make out my grocery list so I make sure I have all the items I need for the above menu plus breakfasts and lunches for the week along with the stuff for the birthday party.

Baked Teriyaki Chicken.

It has SUPER reviews and we love it, too!

This recipe serves 6,
but you could easily cut it down to fit your needs.
I wouldn't cut down on the sauce though.
It is so good drizzled over white rice!


Baked Teriyaki Chicken
Ingredients:
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 cup white sugar
  • 1/2 cup soy sauce
  • 1/4 cup cider vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • 12 skinless chicken thighs

Directions:
  1. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  2. Preheat oven to 425 degrees F (220 degrees C).
  3. Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
  4. Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.
Glazed Carrots:
Peel carrots and cut into coins. Boil until tender. Drain and add some brown sugar (to your taste) and butter.

Follow package directions

I estimate you will need 3 lbs of chicken thighs - $2.94
Fresh Carrots will be about $1.00 per lb - $1.00
Rice - if you bought rice at Ingles last week, use the other half of the package - $0.55

A little of this and that

I’ve not been deep cleaning lately but I have been trying to keep on top of the day to day stuff and laundry.

Today I’ve got laundry going and I’ve done my daily routine. You know the drill…making beds, washing dishes, wiping the bathroom, taking care of the little boy…

I also decided to try baking bread again. *Sigh* I want to learn how to make those yummy, fluffy loaves of bread but mine always turn out heavy. I tried a new recipe and I think I’m coming close to what I want. This bread turned out fluffier but it was still a bit dense. I think a bit more kneading is required. At least this loaf is okay to eat LOL.

The recipe I used makes 3 loaves, but I didn’t want 3 loaves. I turned part of the loaf into bread sticks for dinner tonight and boy are they GOOD! I used the rest of the dough for cinnamon danish. They look yummy and smell great. I just need to add a powder sugar frosting and we’ll have these for our after school snack.

One other project I worked on today was cleaning out the book case. We have a small book shelf in the living room with some of the kids books. Mostly the little boys books and the older kids keep their books in their rooms.

This book case has just gotten WAY out of hand. Lots of books that are no longer useful to us have been piled in.

SOOO much better! I’ve got lots of great books that will go to a yard sale when ever we have one. Hopefully they will find a good home :-)

Tonight we’re having homemade pizzas and I trying my hand at making pizza dough. The kids have AWANAS tonight and dinner will be early. I’ll get the kitchen cleaned up while they are gone then I’ll be free to enjoy the rest of the night!

For now, it’s the little boys nap time and I may just join him ;-)

Bargain Meal - Bi Lo (2/11/09)

Here is a pretty yummy bargain meal I found using the Bi Lo sales paper.

Tilapia is on sale BOGO so your cost for (1) 16 oz package is $4.00
`
Southern Home 10 oz frozen broccoli $1.00 (sorry for more broccoli but it's a good deal and it goes with the tilapia recipe)
`
Blue Ribbon Extra Long Grain White Rice is BOGO. Use approximately 1/2 of the package and your cost is $0.55.
`
(You will need a few spices and lemon juice but I've not figured this into the cost. I assume if you cook much at home that you will have these basic supplies already on hand)

To make the Tilapia, spray a baking dish with cooking spray. Place your fish in the dish, dot with butter and sprinkle with salt, garlic powder, Old Bay seasoning and paprika. Add a dash of lemon juice to each piece of fish or place a lemon slice on top. Place your frozen broccoli in the baking dish around the fish. I like to sprinkle the spices on the broccoli to add a bit more flavor, but that is optional. Cover with foil and bake at 375* for 25 - 30 minutes.

Prepare rice according to package directions.
Serves 4

We tried this dish for the first time earlier this week and the kids just LOVED it!

Bargain Meal - Ingles (2/08/09)

$5 Dinners is host to "Bargain Meal of the Week".

Here is her description of this new weekly feature:

"Bargain Meal of the Week is a weekly roundup of all the best bargain meals from different grocery stores around the country.

Different contributors from all over the US browse their grocery store circulars and come up with an "uber cheap" recipe based on what ingredients are on sale that week in their store. They post the recipe or meal ideas on their site and link them to the Bargain Meal of the Week post."



I think this is a really neat idea and wondered what I could come up with using our local stores.

Of course Bi-Lo and Publix haven't released their new ad, but the Ingles (South Carolina) ad came out Sunday.

Here's what I came up with:
  • Barilla Pasta 16 oz (spaghetti noodles) : $1.00

  • Honeysuckle White 85% Lean ground turkey: $1.98

  • Del Monte Traditional Spaghetti Sauce: $1.00

  • Laura Lynn 10 oz Veggie Steamers Broccoli: $1.00

  • Total Cost: $4.98

    If you prefer to have a salad with your spaghetti you can get the Fresh Express Salad Kit for $2.50 to replace the broccoli and your cost would be $6.48.

    Some folks don't serve a side with spaghetti which would put your cost at $3.98 or you could add toasted bread for a few more pennies.

    This would easily feed a family of 4 and would even feed my family of 6 (my kids aren't big eaters).

    Here's another deal for you:
  • Tyson whole chickens: $0.98 per lb ($3.92 for 4 lbs --you will only use 1/2 of the chicken-- $1.96)

  • Del Monte French Cut Green Beans $0.67

  • Dutch Yellow Potatoes: $2.98 per bag (these don't have a weight listed but I'm thinking it's a 5 lb bag. You'll only use 1/2 of these $1.49)

  • I like to put my chickens in the crock pot. I sprinkle them with salt, pepper, paprika, garlic powder and onion powder inside and out. I add a bout 1/2 cup of water to the crockpot, put on the top and cook until the chicken is very tender. I pull all the meat off the bone and serve on a platter. At this point you'll want to reserve 1/2 of the chicken for another meal. (Soup or a casserole is a great use for this. You can even pop it in the freezer to use later) Be sure to strain the juices from the chicken to make gravy.

    Use 1/2 of the potatoes to make mashed potatoes.

    Heat up the can of green beans.

    Cost of this meal: $3.65

Mom and I went to Hamrick's on Tuesday and found a few bargins.

I thought I'd share the deals we found for the "little boy" for next year.

This is a "two in one" set. He might can wear the short sleeved shirt this summer then use it as an over shirt in the fall & winter.

You just can't beat $1.49 for a basic little boy's t-shirt.

I was going to skip Valentine gifts for the kids this year.
I mean really...do they NEED more stuff?
I figured on giving them a card with money in it.
Easy...simple...no thinking involved ;-)
However...Monday night I droped in the local Goodwill
and found some really great books.

I found 3 books each for the older kids and 2 books for the litte boy.
Each book was $0.50 except for one hard back book for "K" and it was $1.00
I'm going to give each child one book for Valentine's and the other books will go into their Easter baskets.

It beats that $5.00 per card I was gonna do!
