Okay, it's that time again!
Bargain Meal of the Week - Bi Lo!!!!
Bi Lo has Split Chicken Breast on sale for $0.99 per lb.
Oh the things you can do with chicken :-)
If you can, stock up and fill the freezer!
Here's an easy yummy chicken dish that is one of our faves....
3 lbs of skinless, boneless chicken
(yes, that means you will need to skin and de-bone the chicken)
2 cans of cream of chicken soup
1/2 can of water (I use the can the soup came from)
Line a baking dish with the chicken. Sprinkle with a little salt and pepper to taste. Mix the soup and water until combined and pour over chicken. Cover with foil and bake at 350* until the chicken is done and fork tender.
I like to serve mashed potatoes with this dish and pour the gravy from the chicken over the potatoes. Add some English peas and you've got one yummy supper!
3 lbs of chicken - $2.97
5 lb bag of Walter's Russet Potatoes $3.49 - use 1/2 = $1.75
Le Sueur Peas = $1.44 (these are the only kind of peas I buy. You may find another brand that you enjoy to be less expensive)
Total Cost of Meal : $6.16

Make enough mashed potatoes to have 2 cups left over and use them for supper another night with this recipe:
Rachel Ray's Left Over Mashed Potato Soup
Ingredients:
6 slices of bacon, chopped
4 tablespoons of butter
1 medium onion, chopped
4 tablespoons of flour
1 quart of chicken stock
2 cups left over mashed potatoes
8 ounces yellow cheddar cheese shredded
Directions:
In a medium pot or Dutch oven, cook bacon until crispy. Remove bacon and reserve. Drain bacon fat from the pot and add butter. When it is melted, add onion and cook until softened, about 5 minutes. Sprinkle flour into the pot and cook with a wooden spoon for one minute. Whisk in the chicken stock and bring to a bubble. Cook until slightly thickened, about 2 -3 minutes. Whisk in mashed potatoes, then stir in cheese with a wooden spoon and cook until the potatoes are hot and the cheese is melted. Transfer to a serving dish and garnish with the reserved bacon and chives.
Right now Bi Lo has Southern Home Shredded Cheddar Cheese on sale for $1.67 for 8 oz.
Pick up a bag of Fresh Express Garden Salad for $0.99 and even some Fresh Baked Pane Italiano Bread for $2.00 and you've got another super yummy, very frugal dinner!
